Wine characteristics and description
Sauvignon vert as a variety originates from northern Italy. Except of Simčič, only few other growers produce it in the Gorizia hills. The wine is characterized by its yellow colour with a golden shade. It has rich, full-bodied taste, strong mineral accents and pleasant characteristic finish of ripe almonds. If we leave the wine in a glass for a while, it develops more complex, delicate and discreet aromas, which start from herbal tones to the smell of dry wildflowers.
Although Sauvignon vert is mostly popular as young wine, its development in the bottle is in appropriate vintages getting better up to 10 years.
Sauvignon vert pairs well with boiled asparagus with a crumpled, hard-boiled egg, avocado cream and light salad dressing, to pasta and risotto with various vegetables, omelette with artichokes or various herbs. We offer it to sea cold appetizers, grilled vegetables, meat medallions or stuffed chicken.
